How to make a Paloma cocktail: Café Pacifico's classic recipe

We all love a Margarita... But in our humble opinion the Paloma - sister to this iconic classic Mexican cocktail - is the longer, pink tequila drink you also need in your repertoire. If you’re looking for a Paloma recipe, Café Pacifico’s perfected version should be your first choice!

We've persuaded some of London's best bartenders to open their recipe books and tell us how to make some of their most-loved cocktails. First up, Café Pacifico have kindly shared the recipe for their expertly crafted Paloma - so any tequila lovers can now make it at home!

Café Pacifico opened in 1982 - and was one of the UK's FIRST tequila bars. They've also been taking part in the festival since we started in 2010! And so of course Bar Owner Carlos Londiño was our first port of call in our search for the perfect Paloma cocktail recipe. 

Café Pacifico’s Classic Paloma.

40 ml Blanco Tequila 100% agave
10 ml agave nectar
10 ml lime juice
20 ml pink grapefruit juice

Topped with Grapefruit Soda.

To prepare, create a salt rim by wiping a juicy lime wedge around the top of a highball glass and then dipping the edge into rock salt.  
Then add all the ingredients into a cocktail shaker, fill with ice and SHAKE! 

Strain into your prepared glass, top up with grapefruit soda and garnish with a slice of pink grapefruit.
